We are on a keto style diet all the time. In order to maintain a healthy weight we have to make sure that everything we eat is balanced out properly.
So, whenever I bake, I make sure to include a wack of protein powder to help balance out the Calories and Carbs. Using the almond flour added in some more protein so I had a total of about 50 grams for the whole cake. Using Stevia as part of the sweetening cut down on the sugar.
I find that using the crockpot to bake the cake keeps it moist.
It actually is a very delicious cake. I usually serve it with raspberries or strawberries, which add a really nice touch.
